Intro and Question for the forum: HU or Tablet + EQ

Alright guys, I've been lurking here for a while and have picked up a couple of pieces here for a build in a new-to-me 2005 Tundra Double Cab. I also have some bits left over from previous build.

Here is what I have:
Amp: JL XD700/5
Speakers:
(F) Infinity kappa components
(R) Infinity kappa two-way
(S) JL 8" microsub
wiring: knu wiring kit
and a box of ALPHAdamp!
Equalizer: ERE-G180 (not sold on using this again)

What I don't have:
HU/signal

What I want:
Nice SQ installation. I'm a weekend-warrior type audio guy, I guess. I like tinkering, but once it is in, it will most likely be in for years, and then I'll have to re-learn the car audio curve for the next vehicle. I'd not hate GPS/backup cam, as I got spoiled by my 2010 4Runner, but not getting hung up on it. I'd like to keep it relatively inexpensive from this point (<$400).

Option 1:
Ok, after having read up, I'm about ready to pull the trigger on a DEH-80PRS...Easy peasy, just wire it up. Forgo backup cam/GPS (or go with separate units for those eventually). Great SQ, easy to work with and maybe overkill, but I'll be able to get it right. Music will mainly be on USB or phone to AUX-in/BT streaming. Some radio, CDs etc too, I am sure.

Option 2:
Tablet (Nexus?) + the Alpine ERE-G180. I guess my primary concerns are getting a clean signal with enough power into the EQ to get a good signal out (4v in/out capable). The EQ could be mounted in the center console or something close, providing easy access for sub volume and EQ purposes. I can make my own tablet mount, I'm not worried about that. This way, it would be pretty stealth, I'd get my digital music and that is cool, that meets the majority of my needs. The GPS would be a bonus, and there are no viable cam inputs to tablets from what I've found. I'd give up radio functionality, CDs, etc this route.

Will the tablet + EQ give me the same kind of sound quality that I'd get from a HU? I know the 80PRS is top notch, and I'd ciould be a happier with something a bit less, but if I'm spending the time putting in a HU i'd rather just do it once and have something good in there.
